COCONUT BACON!! Before developing this recipe, I searched to no vail, as far as my browser allowed, for a coconut bacon recipe I loved. I wanted something not just smokey, but full bodied, bursting with spices, savory, and sweet flavors–so I made it myself. This coconut bacon recipe is by far the best I’ve tasted. I love putting it inside BLTA sandwiches, atop avocado toast, on soups, salads– you name it. I know you’re going to love it!
TIP! These taste better when they’re crispy, so keep an eye on them when they’re in the oven. You want them to be a rich golden brown. Oven temperatures vary, so I suggest keeping an eye on it once it passes the 8 minute mark. Also, sometimes I add a few extra dashes of smoked paprika, garlic granules, and nutritional yeast to taste. It’s up to you if you’d like to do the same, however, it is amazing as is!
Coconuts are a nutritional powerhouse, filled with healing antioxidants. These antioxidants are anti-viral, anti-bacterial, anti-fungal, and anti-parasite. They contains fatty acids that can improve brain function and help support the immune system. Not to mention the wonders coconut does for hair and skin!
I plan on gifting 24 oz jars of this for the holidays. Not only is it a thoughtful gift you made with your very own hands and heart, it’s also a lovely way to introduce those in your life to delicious plant-based foods.
